It’s the Scalloped Corn Casserole, or the Cracker Corn, as my partner calls it. This is not a seafood dish, and there are no scallops in this recipe. It’s called scalloped corn because scalloped refers to baking the dish with a cream sauce and a crumb topping, similar to scalloped potatoes.

This country-style creamed corn casserole is a simpler version of the classic scalloped corn casserole. It only needs 3 ingredients and takes less than 5 minutes to prepare. It’s always the kids’ favorite at Thanksgiving and Christmas meals. The creamy corn base and crunchy saltine cracker topping create a wonderful contrast.
