What is your favorite getaway place? For my family, it’s the beach, especially our favorite beach, Laguna Beach. Inspiration tends to overflow when I am relaxed. Over the weekend, a trip to the beach led to the creation of my newest recipe, the Garlic Butter White Wine Mussels.
Last weekend, the weather was perfect for the beach, so we decided to head out and enjoy the So Cal sun. My partner and I enjoy taking relaxing walks barefoot on the sandy beach while the kids dig into oblivion. I am always inspired by their authentic Italian dishes and beautifully plated cuisines. We love ordering seafood at popular restaurants by the beach because the food is always guaranteed to be fresh.
One of the silliest things we love to do when we go out to eat is competing to see who ordered the most impressive dish. This time, my partner won hands down with his Cioppino dish, overflowing with black tiger shrimp, Tasmanian salmon, clams, fresh fish, oregano, and garlic, in white wine and tomato broth. It looked so mouthwatering, but I can’t tolerate spicy food. I felt like a little kid staring at another kid’s candy!
After I came home, I had to come up with a way to make up for all the seafood that I could have had if it wasn’t spicy. Suddenly, I remembered my cute red Le Creuset Mussel Pot that I had stashed in the pantry and forgotten about.
